Perfect Pancake Recipe

Indulge in these light and fluffy pancakes on Shrove Tuesday.

Batter Ingredients
200g self raising flour
1 ½ tsp baking powder
1tbsp caster sugar
3 eggs
200ml milk
Plus 25g melted butter for frying

1. Place all the dry ingredients into a bowl.
2. Gently mix in the egg and milk using a whisk until the mixture becomes smooth.
3. Warm a frying pan and add the butter. Once it is frothy, pour in round circles of batter mix to around 8cm in size. Ensure you don’t place the circles too close together as they will spread during the cooking stage.
4. Bake the pancakes on one side for around 1-2 minutes or until tiny bubbles come to the surface and they are lightly brown.
5.Flip the pancakes over and bake for another 1-2 minutes until golden. Repeat until all the batter is used up.
